On a hot evening or during a world pandemic health crisis, there are few better ways to cool off than with a perfect summer cocktail. There are the old standbys, like a classic frozen margarita and mint julep, but we’ve also got plenty of recipes if you want a cocktail that’s just a little different. For instance, nothing can beat a watermelon and basil combination when it comes to summery flavors, and if you’re a rosé fan, try this bright pink drink. Whatever (and wherever) you like to drink, we’ve got the perfect summer evening cocktail recipes for you.

 

Summer evening drink 1 is a take on the classic rose’ spritzer, we’ve given her the name Evening Rose.

 

Evening Rose’

SERVES:  4-6  |  Time:  5 MINUTES

Ingredients

  • 12 cups dry rosé wine
  • 34 cup brewed hibiscus tea, chilled
  • 34 cup Lillet Rosé
  • 13 cup plus 1 tbsp. fresh lemon juice, plus wheels for garnish
  • 13 cup plus 1 tbsp. simple syrup
  • 3 tbsp. Aperol
Sparkling wine, for serving
Edible flowers, for garnish
Grapefruit slices, for garnish

Instructions

Combine wine, tea, Lillet, lemon juice, simple syrup, and Aperol in a pitcher. Divide between 4–6 ice-filled glasses and top each with 1–2 oz. sparkling wine. Garnish with lemon wheels, edible flowers, and grapefruit slices.

THE MALIBU

Serves:  MAKES ONE COCKTAIL  |  Time:  8 MIN

For the Grapefruit Syrup (makes about 3/4 cup)

  • 12 cup fresh grapefruit juice
  • 12 cup sugar
  • 12 tsp. grapefruit zest
  • 14 tsp. citric acid

For the Cocktail

  • 2 oz. tequila
  • 12 oz. fresh lime juice
  • 1 oz. pisco, preferably Encanto
  • 1 oz. grapefruit syrup
  • 1 oz. Lillet Blanc
  • 1 oz. Pamplemousse
  • 2 tsp. Campari
  • 14 tsp. kosher salt
Grapefruit wedge, to garnish

Instructions

Make the syrup: In a small bowl, whisk the grapefruit juice with the sugar, zest, and citric acid until the sugar dissolves. Cover with plastic wrap, and refrigerate for at least 8 hours. Pour the syrup through a fine sieve into a bottle and store in the refrigerator.
To make the cocktail, in a cocktail shaker filled with ice, combine the tequila with the lime juice, pisco, syrup, Lillet, Pamplemousse, Campari, and salt, and shake vigorously for 15 seconds. Strain into a coupe glass and garnish with a grapefruit wedge.
